Foundational Certificate Programs
Istanbul Culinary Institute Cookschool is a two-evenings-per-week certificate program, especially designed for cooking enthusiasts who work full time during the day and do not have time for a professional program. Following a rich content from world cuisines, Cookschool offers technical instruction as well as cooking with recipes.

Program content
- Knives, knife skills and safety, cutting vegetables and fruits
- Working with fish, poultry and meat; preparing stock
- Basic sauces and their uses; classic tomato sauce; mornay, supreme, veloute and béchamel sauces; Hollandaise, mayonnaise, chutney
- Soups and soup varieties: grainy, pureed and thickened, such as onion soup, gazpacho and bisques
- Cooking methods, sauces for sautéing and frying; braising, stewing, baking and roasting, pan- and deep frying, grills and pilafs, fish with menuire sauce, Korean style ribs, chicken couscous tagine, stew with plums and ratatouille, roast chicken with gravy, zucchini fritters, schnitzel, lamb chops with mojo sauce, grilled vegetables, steaks and grilled salmon, risotto, paella, vegetable pilafs
- Desserts with fruits, milk and syrup; popular desserts; cheesecake, baked rice pudding, sekerpare
- Basic pie dough; fruit tarts and quiche
- Pastries and baked goods
- Wines and food-wine pairing
- Canapés, sandwiches and finger foods

- Wusthof 3-piece knife set (with carrying case)

- All the ingredients to be used in the kitchen throughout the program

Italian cuisine enjoys great popularity and much demand in Turkey. This program is designed for cooking enthusiasts who wish to deepen their knowledge and repertoire of Italian cooking. Guided by your chef, you will cook soups, pastas and all the familiar tastes of Italy and when you receive your certificates, you will have acquired a rich menu.
