Cookschool

Istanbul Culinary Institute Cookschool is a more compressed certificate program, especially designed for cooking enthusiasts who work full time during the day and do not have time for a professional program. Meeting two evenings per week, Cookschool offers a rich content from world cuisines, in addition to instruction in technical kitchen skills and cooking with recipes.

Program Content
- Information on knives, knife skills and knife safety; cutting vegetables and fruits.
- Working on fish, chicken, lamb and veal; filletting, deboning and preparation of stocks
- Main sauces, derivative sauces and their uses; classic tomato sauce, Mornay sauce, Supreme and Béchamel sauce, Veloute, Hollandaise, Mayonnaise, Chutney and much more
- Soups and variations; Onion soup, Gazpacho and fish soup
- Cooking methods; sauteing and pan sauces, braising, baking, pan-fry and deep frying, grilling and methods of cooking rice
- Menuire fish sauce, Korean style ribs, chicken with couscous tagine, Ratatouille, beef stew with prunes, baked chicken with gravy sauce, baked pasta, courgette fritters, fried fishballs, eggbattered fried meatballs
- Schnitzel, lamb chops with mojo sauce, grilled vegetables, grilled steak and salmon
- Risotto, Paella, rice pilaf with vegetables
- Desserts with fruit, milk, syrup and other favourites
- Cheesecake, baked rice pudding, sugar dough with syrup
- Basic tart dough, fruit pies and quiche making
- Coffee
- Canapés, sandwiches and snacks
- Wine, food-wine pairing

Program fee is 2.600 TL. Payment in 4-month installments is available for Garanti Bankasi credit cards.
